Coral Trout and Green Mango Curry

I've realised that some of the recipes in the book call for seasonal ingredients. And it just so happens that it's mango season at the moment - or rather the end of mango season. This recipe calls for green mangoes. Not sure I'm going to have a lot of luck with green mangoes at this point. However... our mango tree has two left - that just happen to be very green!


Begin by roasting the spices.


And then grinding.



Peeling.


Chopping.


Frying.


Boiling.


And even if you've just got out of the shower... serving!


And if it's me - adding extra chilli.
